Fresh Mozzarella




Sometimes on Sunday's my mom prepares a "mozz-party" for us all. This includes her homemade mozzarella. I know I know. Here's your chance.
If you have a Italian store near you that sells fresh curd you can make your own homemade mozzarella. It's not difficult to do and there's nothing better than fresh mozz.

Ingredients:
1 Lb. of curd
2 Quarts of boiling water
2 tbs. salt

Prep:
2 bowls- one for boiling water & one for ice water and ice cubes
Have a wooden spoon ready.

Recipe:
Let the water come to a boil and add the salt. When the water comes to a full boil, turn off the water and immediately prepare your curd. Preparation for the curd is just to break up the curd into small pieces about the size of a pea. You'll need a wooden spoon. In a large bowl pour boiling water over the curd until the curd is just covered with water. Using a wooden spoon begin to stir the curd by going to the bottom of the bowl and pulling up. Continue this motion going around the bowl until you pulled almost all the curd into one melting piece of mozzarella. It should take about a minute or two. Drain off the water. Then repeat this part again (adding boiling water, pulling motion) Pull the cheese with your hands and you can either make small balls or braid the mozzarella. Immediately replace the bowl with cold water and several ice-cubes. Let sit for about 5 minutes in the icy water and then cut it up.
