Chicken Parm!




Does chicken parm need a story? We think it speaks for itself...

Ingredients:

1 Lb. thinly sliced chicken breast
1 cup of buttermilk
3 eggs scrambled
1 cup of Italian style breadcrumbs
1/4 cup of grated Parmesan cheese
1 tsp of salt
1/2 tsp of pepper
1/2 tsp of granulated garlic
1 cup of tomato sauce
1 Lb. of mozzarella thinly sliced
2 Tbs. of canola oil

Prep:

Place chicken cutlets into a zip-lock bag filled with the buttermilk, refrigerate this for 30 minutes. Pre-heat oven to 325 degrees. Grease 13 X 9 baking dish.

Recipe:

Remove chicken from buttermilk, wash & drain. Place chicken into scrambled eggs and set aside. Use a flat dish and place breadcrumbs, cheese, salt, pepper, garlic and toss. Place 2 tbs of canola oil in large frying pan and heat to medium high. Coat each side of cutlets with egg and then dip each cutlet into bread-crumb mixture. Place in frying pan. Fry on each side for about 5 minutes until golden brown on each side. Place 1/4 cup of tomato sauce in prepared baking dish. After cutlets are fried, place them into the dish. Put one slice of mozzarella on top of each cutlet. Put the baking dish in the oven for 15-20 minutes just until the cheese is melted.
