Homemade Pasta



Over the holidays we made homemade pasta. Fresh pasta is so so easy to make it is surprising that we don't make it more often. No matter how good the fresh or dried pasta you buy is, it generally doesn't match the flavor of good homemade pasta. Give it a whirl and being a homemade pasta maker is definitely something to brag about!

Ingredients:
2 large eggs
1 1/4 cups of all-purpose flour
pinch of salt

Recipe:
To make the dough by hand, make a well in the flour on a clean, flat surface. Break the eggs into the well and add the salt. Working with your hands or a fork, begin incorporating flour into the eggs at the center. Before long you'll have a workable dough, which should be kneaded for several minutes. The goal at the end of kneading is to have a well-formed, elastic dough that is very smooth. Roll out each piece of dough into long, flat, rectangular sections and process through your machine. Once that is finished, be sure to keep the pasta separated from each other because fresh pasta does have a tendency to stick. When your water is boiling add your pasta! Keep in mind that fresh pasta only takes about 2 or 3 minutes to cook compared to 10-11 boxed pasta takes to cook--so keep a close eye on your pasta!
